Chocolatey Chocolate Pie Recipe
Mmmmmm Mmmmmm Delicious for the chocolate lover.Be sure to choose a good quality dark chocolate for the sauce recipe to make a really good chocolate sauce.
2 cups chocolate wafers or 2 cups chocolate graham crackers
1/4 cup sugar
3/4 stick of butter (6 tablespoons)
3 tablespoons unsweetened cocoa
1/3 cup flour
1 cup sugar
3 egg yolks
1 cup water, divided
2/3 cup milk
2 tablespoons butter
1 teaspoon vanilla
12 ounces (340 grams)semi sweet or bittersweet chocolate cut into small pieces
Some really good chocolate brandsare Lindt, Callebaut, and Scharffen Berger
1 cup heavy whipping cream
1/3 cup granulated white sugar
1/3 cup light corn syrup
1 1/2 teaspoons pure vanilla extract
1 tablespoon strong liquor, such as rum, or liqueurs such as Grand Marnier or brandy(optional)
Melt the butter in the microwave or carefully on the stovetop.
Place the chocolate wafer/graham crackers into a plastic bag. Close the bag and crush with a spoon until you have tiny granular pea sized particles.
Combine the melted butter with the sugar and granulated chocolate particles.
Press ingredients into a 9-inch buttered pie pan making sure to cover all the sides.
Bake for 10 minutes at 325 degrees F.
Mix cocoa and flour in top of a double boiler over hot water and whisk in about half of the 1 cup of water, just enough to make a smooth paste.
Blend in the sugar and the beaten egg yolks and add remaining water and milk.
Cook over low until the mixture is thick; add butter and vanilla.
Pour into baked pie crust.
Place the chopped chocolate in a medium sized stainless steel bowl and set aside.
Combine the cream, sugar and corn syrup and place over low heat. Bring to a boil, stirring often.
Remove from the heat and pour immediately over the chocolate.
Let stand until the chocolate has melted, then stir until smooth.
Stir in the vanilla extract and alcohol if using.
If you want to have the chocolate to surround the pie pieces then place the chocolate on each piece on its own plate.
If the sauce is too thick, just add a little extra cream to it. Garnish with a fresh raspberry.
